Easy cabbage and sausage skillet

I am pretty much the only one in my house that really likes vegetables. I love cabbage and have been craving it lately. My mom always made cabbage but usually the same way, cooked down with lots of butter. This cabbage dish is hearty and healthy. So good! This recipe is about 2 servings but feel free to double it, of course!






Ingredients:
1 pound (half a package) fully cooked Polska kielbasa (cut in half lengthwise, then cut into 2 inch pieces)
1 tablespoon olive oil
1/2 head cabbage, coarsely chopped (2 inch pieces)
1 small sweet onion, cut into large dices
1/4 teaspoon salt
1/4 teaspoon black pepper
1 clove garlic, minced
1 teaspoons sugar
1 teaspoons rice wine vinegar or apple cider vinegar
1 teaspoons dijon mustard

Directions:
Heat olive oil in a large nonstick skillet over medium-high and add kielbasa.
Cook, without stirring for 1 minute. Then, stir occasionally for about 3 minutes. Transfer to a plate.
In the same pan add the cabbage, onion, garlic, sugar, salt, and pepper. Stir to combine and cook for about 10 minutes, stirring occasionally. (Don't worry! It will cook down!)
Add in the vinegar and mustard; add the sausage back to the pan and cook for another 2 minutes to heat through.
